Salmon Soup, my recipe inspired by Finnish Salmon Soup
2 sticks of celery
piece of celeriac
3 medium potato
fresh parsley
fish broth
and about 400g of fresh salmon
And it is really simple. First, fry the onion and leak and add first carrot and celeriac, followed by celery and potato and fresh parsley in the end. When it is lightly fried, then I add 1 liter of water and 1 cube of fish broth or if I have time I make my own broth from salmon heads and bay leaf, allspice, and pepper. When the soup is almost ready add the salmon cut on small pieces. But do not boil anymore. The lower temperature, the longer to cook the soup, the better it is in the end. If you want add the salt according to your taste. I am cooking for small kids, so I am trying to avoid salt.
I live in Helsinki for almost 10 years and I have fallen in love with this country at first glance. I have adjusted so well, but there are still few things I cannot go over. And that are dill and liquorice. You can find liquorice in everything, from ice cream to soap or cream on hand. Unfortunately, the same works for the dill. I have tried to go over it many times. I didn't give up. I love salmon in whatever shape and form. But because of this I had to create me own dishes. I like to use different herbs instead. My favourite is parsley. This soup is great, baby friendly as well. My younger daughter loves it and we are having it every Sunday as a lunch.
Here is the recipe for about 1 liter of soup. Plus minus, I have never done anything the same way. I simply cannot do it. I need change. :-)
